1. Phasma

This one may feel like a stretch, but I love the potential. Obviously the Phasma we’d potentially meet in the Mandalorian wouldn’t be Captain Phasma. She would be a child, but that is where I think it gets most interesting (and a little off canon, but that’s okay for the time being).

Phasma and her brother Keldo were raised in the Scyre, a warrior clan on Parnassos. Parnassos is home to plenty of interesting lore that could be visited on the Mandalorians travels, not least of all would be the possibility of encountering a young Phasma, and the potential that would produce to see what she was like as a child.

Especially if The Mandalorian’s Din Djarin has a run in with the Scyre and encounters the young Phasma in some capacity, either with her trying to kill him, or her trying to help him. Personally, I’m more a fan of the former.

Of all the characters from the sequel trilogy, Phasma would be the one I’d most want to see, as well as the one that would feel less like a forced fan service and more like an actual plot point. (although… Babu Frik?). She’s such a compelling villain and getting even a taste of her backstory would be delicious.

Plus, it’s just an “off the beaten path” enough kind of appearance. If you include Chewie or Fett, you really are just doing a cameo. Having Phasma feature as part of the Scyre feels more organic.
